New business banks on local taste for oil and vinegar

In the 1990s it was frozen yogurt. Ten years ago, cupcake shops began opening everywhere. Alexandria natives Penny and Mike Williman hope oil and vinegar tasting rooms are the next tantalizing trend in the food service industry.
    
The husband and wife team will open Olio, an oil and vinegar tasting room at 1223 King St., in July. Its the first retail outlet for high-end olive oils and vinegars in the area, according to Penny Williman. Its part of a growing gourmet niche mimicking oil and vinegar establishments popping up around the country.
    
Along with sampling vine oils and vinegars, patrons can dine on grilled salmon marinated with spicy chipotle olive oil and mango balsamic vinegar, as well as dark chocolate balsamic vinegar reduced and drizzled on vanilla bean ice cream.
